Tacos on the road

Mexican Steak Tacos

SERVES 4-6

INGREDIENTS

  • 8-12 soft tortilla wraps
  • 600gm beef rump steak, cut in half
  • 2 tbsp steak seasoning
  • 2 tbsp taco seasoning
  • Sour cream, to serve
    Salsa ingredients
  • 2 spring onions, sliced
  • 2 tbsp coriander, chopped
  • 1 tomato, diced
  • 1 small red onion, diced
  • 1 lime, juiced
  • 3 tbsp extra virgin olive oil
  • 1 tin corn kernels
  • 1 tbsp jalepenos, finely chopped (optional)
  • Salt and pepper to taste

METHOD

  1. Mix the steak seasoning with the taco seasoning in a bowl. Toss both halves of beef in the mix till evenly coated. Leave aside to allow the beef to infuse the flavours.
  2. Roast the corn kernels in a fry pan on high heat with a drizzle of olive oil.
  3. Mix all the salsa ingredients in a small bowl and leave it aside.
  4. Heat a heavy based pan over high heat or fire up the seasoning. Add the steak and drizzle with a little olive oil. Cook for 5 minutes on each side until cooked through.
  5. Remove the beef from the pan once cooked and allow it to rest for 10 minutes before slicing into thin strips.
  6. Warm the tortilla on a clean pan.
  7. Spoon some of the salsa onto a warmed tortilla, add a few pieces of steak, and top it off with some sour cream and it’s ready to eat!

Extra servings can be kept in the motorhome’s refrigerator and warmed up in the microwave or oven for your next meal.
