IN CELEBRATION OF WORLD HONEY BEE DAY ON SATURDAY, 20 AUGUST, GEMLIFE CHEF MATT CONQUEST SHARES HIS NEW FAVOURITE BREAKFAST SPREAD – CREAMED HONEY.

Creamed honey, also called whipped honey, spun honey and churned honey, is crystallised honey which can be spread like jam.

Left to its own devices, raw honey slowly forms crystals over a long period of time. The crystals are large and feel gritty in the mouth and are not very appealing. However, by controlling the rate of crystallisation, the honey will produce small and smooth crystals to form a thick, creamy spread.

Creamed honey can be used as a sweetener in drinks and baking, but it is also great as a spread on toast, crackers, and other treats.

Give some honey a good whip and you’ll end up with a delicious, healthy and versatile spread that will melt in your mouth.

Creamed Honey

INGREDIENTS

1 cup crystalized honey 1 cup liquid honey

METHOD

  1. Blend 1:1 ratio of crystallised and liquid honey in a blender or with a stand mixer for 20 minutes.
  2. Turn the mixer off and cover it with a clean kitchen towel. Let the honey rest for a couple of hours and then mix again for 20 minutes. Add more liquid honey if needed.
  3. When the honey has an almost whipped cream consistency, it is done.
  4. Transfer the creamed honey into a dry, clean jar and enjoy it with toast, pancakes, bagels, muffins or crumpets
