Cauliflower, Cheddar and Beer Soup

Winter is here! Avoid the chill this season with GemLife chef Matt Conquest’s favourite comfort soup.

The unique combination and bold flavours of his Cauliflower, Cheddar and Beer Soup come together to make a delicious dish which will keep you warm and cosy on a winter’s evening. Serve the soup with some croutons or fresh bread to make it a complete meal.

Cauliflower, Cheddar and Beer Soup

SERVES 6-8

INGREDIENTS

  • 1 small head cauliflower, roughly chopped
  • 300g potatoes, peeled and chopped
  • 1 brown onion, peeled and chopped
  • 1 clove garlic
  • 1.5 L vegetable stock
  • 1 tin or stubby of beer
  • 250g mascarpone cheese
  • 250g cheddar cheese, grated
  • Pinch of salt and white pepper to taste

METHOD

  1. Heat a large pot to medium high, add a splash of oil and onions and sauté. Do not overdo it as you want the soup to be white.
  2. Add in the garlic and potatoes and sauté.
  3. Add in the cauliflower, vegetable stock and a pinch of salt.
  4. Gently cook the soup for about an hour or until all the vegetables are softened.
  5. In a separate bowl, mix the mascarpone cheese and beer.
  6. Once the soup is cooked, turn down the heat and blitz it with a stick blender.
  7. Add the beer and mascarpone cheese mix, along with the grated cheddar into the blender and blend until it is smooth.
  8. Cook on a low heat for 5 minutes to melt the cheese.
  9. Add in more salt and a pinch of white pepper to taste.
  10. Grill up or bake some croutons or serve with fresh bread.
  11. Enjoy your warm and tasty soup! Extra soup can be stored and frozen for an easy and quick meal.
