For the love of rum

GemLife Pacific Paradise resident Anita Rollinson and her family love a little rum at Christmastime, usually in the form of rum balls.

“Rum balls have become a family tradition. My mum used to make them but as she got older, I took over, so they have been an annual festive treat for probably the last 60 or more years,” said Anita.

Anita said various members of the family loved rum which made them a big hit on the Christmas table.

“Mum also made apricot balls with minced apricots every so often too.”

Anita said she has been including rum balls on her family’s Christmas menu since she was married 47 years ago and says as her children got older, one didn’t like sultanas, so she had to make two different batches of rum balls to satisfy everyone’s palates, one with and one without sultanas.

Either way, she says they don’t last long!

Anita’s Rum Balls

Method

  1. Marinate sultanas in rum for a few hours.
  2. Put crushed Weetbix, cocoa, coconut, and fruit in bowl.
  3. Pour over condensed milk and stir well.
  4. Roll into balls in coconut.

INGREDIENTS

  • 8 Weetbix
  • ½ cup coconut
  • 400g condensed milk
  • 1 cup sultanas
  • 2 tbsp cocoa
  • 2 tbsp rum (or more depending on taste)
